Today the grilling project was meatloaf. I like using saltine crackers crumbs instead of bread crumbs or whatever. I made four ¼ pound loafs (approx) and here is what the little loaves of joy were infused with:
2 roasted Pablano peppers diced
½ sweet onion diced
½ large Jalapeno diced
3 eggs / 1 cup milk
2 cups crushed crackers
pepper / saltMixed it up / shaped into loaves
I took the remaining 2 pablano peppers diced up and added 1 cup of leftover slivered saute’ed onions from last nights steak topping and about a ¼ of a bottle of ketchup and mixed up into a glaze. Spooned the glazed onto each loaf and patted into meat.
Primo grill at around 350. I made a foil barrier between the coals and grates with foil. Added a pinch of soaked hickory in the beginning. Cooked an hour.
WOW….so good.
