Strawberries and dairy-free ricotta

Serves 2

Ingredients:

  • 2 cups sliced strawberries
  • 2 tablespoons sweet sherry
  • 1 cup Tofutti’s Better Than Ricotta
  • 1 tablespoon or more agave
  • Fresh mint leaves
  • Finely chopped almonds or another nut of your choice

Directions:

  1. Place strawberries and sherry in a bowl, stirring to combine. Set aside for 20 minutes.
  2. Whisk together ricotta and agave until smooth.
  3. Spoon strawberries into a small clear glass. Top with a layer of ricotta. Top with strawberries.
  4. Garnish with fresh mint and chopped nuts. Serve immediately.
