Serves 4

Ingredients:

  • 4 cups cooked brown rice
  • 2 carrots, diced
  • 1 celery stalk, diced
  • ½ cup roasted red peppers, chopped
  • ¼ cup minced red onion
  • 1 ripe but firm pear, cored, chopped
  • ¼ cup finely chopped fresh cilantro
  • 2 tablespoons olive oil
  • ½ cup mango chutney
  • Salt and freshly ground black pepper
  • 1 cup cashews

Directions:

  1. Combine rice, carrots, celery, peppers, onion, pear, and cilantro in a large bowl.
  2. Whisk together oil and chutney in a small bowl.
  3. Pour chutney over rice mixture, tossing well to combine. Season with salt and pepper.
  4. Add cashews right before serving to keep them crunchy.
