Serves 6

Ingredients:

  • 3 cups vanilla soymilk
  • ½ cup granulated sugar
  • 1-½ cups short-grain rice
  • Finely grated zest of 1 lemon
  • ½ cup coconut milk
  • Fresh fruit of your choice
  • Toasted coconut flakes

Directions:

  1. Combine soymilk, sugar, and rice in a large saucepan over medium-high heat. Bring to a boil then reduce heat to a simmer.
  2. Cook rice mixture, stirring occasionally, until rice is tender and mixture is thickened. Stir in lemon zest and coconut milk and warm through.
  3. Serve rice pudding warm, topped with fruit and coconut flakes.
