Serves 6
Ingredients:
- 3 cups vanilla soymilk
- ½ cup granulated sugar
- 1-½ cups short-grain rice
- Finely grated zest of 1 lemon
- ½ cup coconut milk
- Fresh fruit of your choice
- Toasted coconut flakes
Directions:
- Combine soymilk, sugar, and rice in a large saucepan over medium-high heat. Bring to a boil then reduce heat to a simmer.
- Cook rice mixture, stirring occasionally, until rice is tender and mixture is thickened. Stir in lemon zest and coconut milk and warm through.
- Serve rice pudding warm, topped with fruit and coconut flakes.
