Serves 4
Ingredients:
- 4 cups cooked brown rice
- 2 carrots, diced
- 1 celery stalk, diced
- ½ cup roasted red peppers, chopped
- ¼ cup minced red onion
- 1 ripe but firm pear, cored, chopped
- ¼ cup finely chopped fresh cilantro
- 2 tablespoons olive oil
- ½ cup mango chutney
- Salt and freshly ground black pepper
- 1 cup cashews
Directions:
- Combine rice, carrots, celery, peppers, onion, pear, and cilantro in a large bowl.
- Whisk together oil and chutney in a small bowl.
- Pour chutney over rice mixture, tossing well to combine. Season with salt and pepper.
- Add cashews right before serving to keep them crunchy.
